Pasta and Zucchini

  • 12 oz fettuccine or pasta of choice
  • 2 medium zucchinis spiralized

Creamy Lemon Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons fresh lemon juice
  • Zest of 1 lemon

Additional Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Preparation

  • Wash and spiralize the zucchinis to create zucchini noodles. Set aside.
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water and drain the rest.

Making the Sauce

  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add heavy cream, lemon juice, and lemon zest to the skillet. Stir and let simmer for 5 minutes.
  • Stir in grated Parmesan cheese. Season with salt and pepper to taste. Cook until the sauce thickens slightly, about 3-4 minutes.

Final Assembly

  • Add cooked pasta to the skillet and toss to coat with sauce. Add spiralized zucchini and gently mix. If the sauce is too thick, add reserved pasta water as needed.
  • Once everything is well combined and heated through, garnish with fresh basil leaves. Serve immediately.
