Ingredients
  

Salad

  • 1 1/2 cups orzo pasta
  • 4 cups fresh spinach chopped
  • 1 cup feta cheese crumbled

Lemon Basil Dressing

  • 1/4 cup fresh lemon juice
  • 1/3 cup olive oil
  • 2 cloves garlic minced
  • 1/4 cup fresh basil chopped
  • Salt and pepper to taste

Preparation

  • Bring a large pot of salted water to a boil. Add orzo and cook for 8-10 minutes, or until al dente. Drain and rinse under cold water to stop the cooking process.
  • In a small bowl, whisk together lemon juice, olive oil, minced garlic, and a pinch of salt and pepper. Stir in the chopped basil.
  • In a large mixing bowl, combine the cooked orzo, chopped spinach, and crumbled feta. Pour the dressing over the salad and toss gently to coat.
