Salad Ingredients

  • 12 oz. rotini pasta
  • 3 ears of corn husked
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh basil chopped
  • 1/4 cup fresh parsley chopped

Dressing Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp lime juice
  • Salt and pepper to taste

Preparation

  • Cook the pasta according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.
  • Preheat the grill to medium-high heat. Place the corn on the grill and cook, turning occasionally, until charred and tender, about 10 minutes. Remove from grill and let cool.
  • Once the corn is cool enough to handle, use a sharp knife to remove the kernels from the cob. Prepare the remaining vegetables by chopping the cherry tomatoes and red onion.
  • In a large mixing bowl, combine the cooked pasta, grilled corn, cherry tomatoes, red onion, feta cheese, basil, and parsley.
  • In a small bowl, whisk together mayonnaise, sour cream, lime juice, salt, and pepper until smooth.
  • Pour the dressing over the pasta mixture and toss to coat evenly. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve the salad cold or at room temperature. Garnish with additional herbs if desired.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
