Preparation

  • Season the sliced chicken breasts with fajita seasoning, ensuring they are well-coated. In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the sliced bell peppers and onion. Sauté until the vegetables are tender. Add minced garlic and sauté for an additional minute until fragrant.
  • Pour chicken broth and heavy cream into the skillet with the vegetables. Stir well and bring to a simmer. Add penne pasta, cover, and cook for about 10 minutes or until the pasta is al dente, stirring occasionally.
  • Return the cooked chicken to the skillet, stirring to combine with the pasta and vegetables. Add shredded cheddar cheese and stir until melted and creamy. Season with salt and pepper to taste.
