Equipment

  • 1 Large skillet
  • 1 Large pot
  • 1 Tongs
  • 1 Whisk

Ingredients

Main Ingredients

  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 12 oz pasta such as penne or fettuccine
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 3 cloves garlic minced
  • 1 cup fresh basil leaves chopped
  • Salt and pepper to taste

Instructions

Preparation

  • Season the chicken breasts with salt and pepper on both sides. Mince the garlic and chop the basil leaves.
  • Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side or until fully cooked. Remove from skillet and let rest for a few minutes before slicing.
  • In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve some pasta water, then drain and set aside.
  • In the same skillet, add minced garlic and cook until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the grated parmesan cheese until melted and smooth.
  • Add the sliced chicken and cooked pasta to the skillet with the sauce. Toss everything together until well combined, adding reserved pasta water as necessary to achieve the desired sauce consistency.
  • Stir in the chopped fresh basil and adjust seasoning with salt and pepper to taste.

Serving

  • Transfer the pasta to serving plates and garnish with additional parmesan cheese and fresh basil leaves if desired.

Storage

  • Place any leftovers in an airtight container and refrigerate for up to three days. Reheat gently on the stovetop or in the microwave, adding a splash of cream to maintain the sauce's texture.
