Equipment

  • 1 Skillet for toasting tortillas
  • 1 Mixing Bowl large
  • 1 Knife for dicing ingredients

Ingredients

Main Ingredients

  • 2 cups cooked shredded chicken
  • 2 ripe avocados diced
  • 1 cup ranch dressing
  • 1 cup shredded cheese
  • 4 large flour tortillas

Additional Ingredients

  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 lime juiced
  • Salt and pepper to taste

Instructions

Preparation

  • If starting with raw chicken, grill or bake it until cooked through. Use rotisserie chicken for convenience. Shred the chicken into bite-sized pieces and set aside.
  • Cut the avocados in half, remove the pit, and dice the flesh into small cubes. Set aside.
  • In a large mixing bowl, combine the shredded chicken, diced avocados, ranch dressing, shredded cheese, diced tomatoes, and chopped cilantro. Mix until well combined. Season with salt and pepper to taste.

Assembling the Burritos

  • Lay out each tortilla and evenly distribute the chicken mixture onto the center of each. Add a squeeze of lime juice over the mixture.
  • Fold in the sides of each tortilla and roll tightly to form a burrito. Ensure the seam side is facing down to hold everything together.

Cooking the Burritos

  • Heat a skillet over medium heat and place the burritos seam-side down. Toast for 2-3 minutes on each side until golden brown and the cheese has melted.

Serving

  • Cut each burrito in half and serve warm. Pair with salsa or sour cream for added flavor.

Storage

  • Wrap any leftover burritos in foil and store in the refrigerator for up to 2 days. Reheat gently in a skillet before serving.
