  • 2 balls burrata cheese

Preparation

  • Preheat your oven to 400°F. Prepare a baking sheet by lining it with parchment paper or spraying it with non-stick spray.
  • Place the cherry tomatoes on the prepared baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for 20 minutes, or until the tomatoes are blistered and caramelized.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Assemble the Dish

  • In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
  • Add the roasted tomatoes and cooked pasta to the skillet. Toss to combine and let the flavors meld together for about 2 minutes.
  • Tear the burrata into pieces and gently fold into the pasta, allowing it to melt slightly. Add reserved pasta water as needed to achieve desired sauce consistency.

Final Touches

  • Garnish the pasta with fresh basil leaves and a sprinkle of red pepper flakes and grated Parmesan cheese, if using. Serve immediately.

Storage

  • Place any leftover pasta in an airtight container and store in the refrigerator for up to 3 days. Reheat gently in a skillet with a splash of water.
