Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and line a baking dish or baking sheet with parchment paper.
  • Whisk together flour and baking powder in a mixing bowl.
  • In a separate bowl, whisk eggs and sugar until smooth and slightly pale.
  • Add olive oil or melted butter, milk or yogurt, and vanilla extract, mixing until well combined.
  • Stir in citrus zest, then gently fold in the dry ingredients until just combined.
  • Spread or scoop the batter evenly into the prepared baking dish.
  • Bake until lightly golden and set in the center, then remove from the oven.
  • Allow to cool slightly and dust with powdered sugar or cinnamon before serving.

Notes

This cozy family bake is lightly sweet and soft, ideal for sharing. Avoid overmixing and do not overbake to keep the texture tender. Store fully cooled pieces in an airtight container at room temperature for up to three days, or freeze and thaw at room temperature before serving.
