  • 8 oz whole wheat pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion finely chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh dill chopped

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

Preparation

  • Boil the pasta in a large pot of salted water according to package directions until al dente. Drain and rinse under cold water to cool.
  • While the pasta cooks, halve the cherry tomatoes, dice the cucumber, chop the red onion, and slice the olives.
  • In a large mixing bowl, combine the cooked pasta, tomatoes, cucumber, olives, red onion, feta cheese, parsley, and dill.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour over the pasta salad and toss to coat evenly.

Serving

  • Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.
  • Toss the salad before serving to redistribute the dressing. Adjust seasoning if needed.
