  • 2 cups cooked chickpea pasta
  • 1 can 15 oz chickpeas, rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup sliced cucumber
  • 1/4 cup red onion thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives pitted and sliced

Dressing Ingredients

  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the chickpea pasta according to package instructions. Once done, drain and rinse with cold water to stop the cooking process. Set aside to cool.
  • While the pasta cools, slice the cherry tomatoes, cucumber, and red onion. Place them in a large mixing bowl along with the chickpeas.
  • Add the cooled pasta to the bowl with the vegetables. Add in the crumbled feta cheese and sliced olives.
  • In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
  • Pour the dressing over the salad and gently toss until everything is well combined.

Serving

  • Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
  • Serve the salad chilled, garnished with fresh basil or parsley if desired.
