Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Rolling Pin
  • 1 cookie cutter small, round

Ingredients

Pizza Dough

  • 1 pound pizza dough store-bought or homemade

Toppings

  • 2 medium tomatoes thinly sliced
  • 1 cup fresh mozzarella sliced
  • 1 cup fresh basil leaves
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

Preparation

  • Allow the pizza dough to sit at room temperature for about 30 minutes before use. This will make it easier to roll out.
  • On a floured surface, roll out the dough to about 1/4 inch thickness. Use a small, round cookie cutter to cut out dough circles.
  • Preheat your oven to 400°F and line a baking sheet with parchment paper.

Assembling

  • Place the dough circles on the prepared baking sheet. Top each with a slice of tomato, a basil leaf, and a piece of mozzarella. Drizzle with olive oil and season with salt and pepper.
  • Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and the edges are golden.

Serving

  • Allow the pizza bites to cool slightly before serving. They are best enjoyed warm.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
