Equipment

  • 1 Large pot for boiling orzo
  • 1 Large mixing bowl for salad assembly
  • 1 Whisk for vinaigrette

Ingredients

Salad Ingredients

  • 1 cup orzo pasta
  • 2 cups cherry tomatoes halved
  • 1 cup fresh corn kernels
  • 1/2 cup red onion finely diced
  • 1/4 cup fresh basil leaves chopped

Basil Vinaigrette

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 tsp Dijon mustard
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

Preparation

  • Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the cooked orzo, halved cherry tomatoes, corn kernels, and diced red onion. Toss to combine.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper. Stir in the chopped basil leaves.
  • Pour the basil vinaigrette over the salad ingredients. Toss well to ensure everything is evenly coated with the dressing.
  • Cover the salad and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Serving

  • Once chilled, give the salad a final toss and serve as a side dish or a light lunch.

Storage

  • Store any leftover salad in an airtight container in the refrigerator for up to 3 days. Stir before serving to redistribute the dressing.
