Fried Rice

cooked rice
cold and preferably day old

butter

tbsp
neutral oil

garlic
finely minced

large eggs
lightly beaten

soy sauce
salt
to taste
black pepper
to taste
For Finishing
2
green onions
sliced
Instructions
Heat a wide skillet over medium high heat and melt the butter and oil.
Add garlic and cook briefly until fragrant.
Scramble the eggs until just set.
Add rice and press into an even layer. Let cook undisturbed to crisp.
Stir in soy sauce, season, and continue cooking until golden.
Finish with green onions and serve.
Notes
Use cold rice and a wide pan for the best crispy texture.
