Ingredients
  

Fried Rice

  • 3 cups cooked rice cold and preferably day old
  • 2 tbsp butter
  • 1 tbsp neutral oil
  • 6 cloves garlic finely minced
  • 2 large eggs lightly beaten
  • 2 tbsp soy sauce
  • salt to taste
  • black pepper to taste

For Finishing

  • 2 green onions sliced

Instructions
 

  • Heat a wide skillet over medium high heat and melt the butter and oil.
  • Add garlic and cook briefly until fragrant.
  • Scramble the eggs until just set.
  • Add rice and press into an even layer. Let cook undisturbed to crisp.
  • Stir in soy sauce, season, and continue cooking until golden.
  • Finish with green onions and serve.

Notes

Use cold rice and a wide pan for the best crispy texture.
