Preparation

  • Preheat the grill or a skillet over medium heat.
  • In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, red pepper flakes, salt, and pepper.
  • Marinate the chicken breasts in the mixture for at least 30 minutes.

Cooking

  • Grill or cook the chicken for about 6-7 minutes per side or until fully cooked.
  • Remove from heat and let rest for a few minutes.
  • Garnish with fresh parsley and serve with extra lemon wedges.

Notes

For extra zest, consider adding a pinch of lemon zest to your marinade for an intensified flavor. If pressed for time, marinate for as little as 15 minutes; the flavor will still shine through. Serve chicken on a bed of greens for a refreshing salad option. Store leftovers in an airtight container in the refrigerator for up to three days.
