Ingredients
  

For the Chicken

  • 1 1/2 lb boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Pasta Style Base

  • 8 oz short pasta

For the Sauce and Vegetables

  • 1 cup milk or light cream
  • 1/2 cup grated Parmesan cheese
  • 1 zucchini sliced
  • 1 cup cherry tomatoes halved
  • 2 cups spinach

Instructions
 

  • Cook pasta according to package instructions and set aside.
  • Season and cook chicken until fully cooked, then slice.
  • Prepare creamy sauce and toss with pasta and vegetables.
  • Assemble bowls and top with sliced chicken.

Notes

Add a splash of milk when reheating to keep the pasta creamy. Store leftovers in the refrigerator for up to 3 days.
