Ingredients
  

For the Chicken

  • 2 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • Vegetable oil for frying

For the Sliders

  • 12 Hawaiian rolls
  • 1 cup marinara sauce
  • 8 oz mozzarella cheese sliced
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 tbsp chopped fresh basil

Instructions
 

Preparation

  • Slice each chicken breast into smaller pieces suitable for sliders. Season with salt, pepper, and Italian seasoning.
  • Dredge each piece in flour, dip in beaten eggs, and coat with a mixture of breadcrumbs and Parmesan cheese.
  • Heat vegetable oil in a skillet over medium heat. Fry chicken pieces until golden brown and cooked through. Set aside on paper towels to drain excess oil.

Assembly

  • Slice the Hawaiian rolls in half horizontally and place the bottoms in a 9x13 inch baking dish.
  • Place a piece of fried chicken on each roll, spoon marinara sauce over the chicken, and top with mozzarella cheese.
  • Place the tops of the rolls on the cheese. Brush with melted butter mixed with garlic powder. Cover with foil and bake at 350°F for 15 minutes.
  • Remove foil and bake for an additional 5 minutes until the tops are golden brown and cheese is melted.

Serving and Storage

  • Garnish with chopped basil and serve immediately while warm.
  • Place any leftovers in an airtight container and refrigerate for up to 3 days. Reheat in the oven to retain crispiness.
