  • 2 cups uncooked pasta
  • 1 pound chicken breast sliced
  • 1 cup cottage cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil chopped

Instructions
 

Preparation

  • Bring a pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and set aside, reserving 1 cup of pasta water.
  • Season chicken with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through, about 5-7 minutes. Remove and set aside.

Make the Sauce

  • In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  • Return chicken to the skillet. Add cooked pasta, cottage cheese, and a splash of reserved pasta water. Stir until combined and creamy, adding more water if needed.
  • Stir in Parmesan cheese and fresh basil. Adjust seasoning with salt, pepper, and red pepper flakes.

Serving

  • Divide pasta among plates, garnishing with additional Parmesan and basil if desired. Serve immediately.

  • Transfer any leftovers to an airtight container. Refrigerate for up to 3 days.
