  • 1 pound boneless skinless chicken breasts

  • 2 tablespoons olive oil
  • 8 slices fresh mozzarella cheese
  • 4 ripe tomatoes sliced
  • 1 cup fresh basil leaves
  • 4 tablespoons balsamic glaze
  • 8 slices ciabatta or Italian bread

Preparation

  • Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for 7-8 minutes on each side until fully cooked and golden brown. Let the chicken rest before slicing.
  • Slice the fresh mozzarella and tomatoes thinly. Wash and pat dry the basil leaves.
  • Lay out the bread slices. On each bottom slice, layer sliced chicken, mozzarella, tomato, and basil. Drizzle with balsamic glaze and top with remaining bread slices.
  • Preheat a panini press or grill pan. Toast the sandwiches for 3-4 minutes per side, or until the bread is golden and the cheese is melted.

Serving

  • Cut each sandwich in half and serve warm with a side of mixed greens or pasta salad for a complete meal.
