  • 2 boneless chicken breasts cubed
  • 1 pound jumbo shrimp peeled and deveined
  • 12 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic minced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a mixing bowl, combine cubed chicken with olive oil, minced garlic, salt, and pepper. Allow to marinate for at least 30 minutes.
  • Clean and devein the shrimp, then season lightly with salt and pepper.

Cooking

  • Boil fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.
  • In a large skillet, melt butter over medium heat. Add marinated chicken and cook until golden brown. Remove from skillet and set aside.
  • In the same skillet, add shrimp and cook until pink, about 3-4 minutes. Remove and set aside with the chicken.
  • In the skillet, add minced garlic and sauté until fragrant. Pour in heavy cream and bring to a simmer. Stir in parmesan cheese until melted and smooth.
  • Add cooked pasta, chicken, and shrimp to the sauce. Toss to combine, adding reserved pasta water as needed to adjust the consistency.

Serving

  • Divide the pasta among plates and garnish with additional parmesan cheese if desired. Serve immediately.

  • Place any leftovers in an airtight container and refrigerate for up to 3 days. Reheat gently on the stove with a splash of cream to maintain texture.
