Equipment

  • 1 pizza stone or baking sheet
  • 1 Mixing Bowl large
  • 1 Baking Sheet for roasting peppers

Ingredients

Pizza Dough

  • 2 cups all-purpose flour
  • 1 tsp sugar
  • 1 packet 2 1/4 tsp active dry yeast
  • 1 tsp salt
  • 3/4 cup warm water 110°F
  • 1 tbsp olive oil

Toppings

  • 2 large red bell peppers
  • 1 1/2 cups mozzarella cheese shredded
  • 1/2 cup pizza sauce
  • 1 tbsp olive oil for roasting peppers
  • Salt and pepper to taste

Instructions

Preparation

  • In a large mixing bowl, combine flour, sugar, yeast, and salt. Add warm water and olive oil, mixing until a dough forms. Knead the dough on a floured surface until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.
  • Preheat oven to 450°F. Cut red bell peppers into halves, remove seeds. Drizzle with olive oil, season with salt and pepper. Roast for 20-25 minutes until charred, then peel and slice.
  • Preheat your oven to 475°F. Punch down the risen dough and roll it out onto a pizza stone or baking sheet.
  • Spread pizza sauce over the dough, arrange roasted peppers, and sprinkle mozzarella cheese. Add any additional toppings as desired.
  • Bake in the preheated oven for 12-15 minutes or until the crust is golden and the cheese is bubbly.

Serving

  • Allow the pizza to cool for a few minutes before slicing. Serve warm with your favorite sides.

Storage

  • Store any leftover pizza in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
