Ingredients
  

Chicken Filling

  • 1 pound boneless skinless chicken cut into small pieces
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Quesadillas

  • 4 flour tortillas
  • 2 cups shredded mozzarella or Monterey Jack cheese

Instructions
 

  • Toss chicken with olive oil, garlic powder, smoked paprika, salt, and pepper.
  • Cook chicken in a skillet over medium heat until fully cooked and lightly golden.
  • Remove chicken and wipe skillet clean.
  • Place a tortilla in the skillet and sprinkle cheese over half.
  • Add chicken and more cheese.
  • Fold tortilla and cook until golden, then flip and cook until cheese melts.
  • Repeat with remaining tortillas.
  • Slice and serve warm.

Notes

Cook quesadillas over medium heat to ensure crisp tortillas and fully melted cheese.
