Ingredients
  

Chicken

  • 2 boneless skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Pasta and Sauce

  • 12 ounces pasta penne or rigatoni
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 2 cups marinara sauce
  • 1 cup mozzarella cheese

Garnish

  • Fresh basil for garnish

Preparation

  • Preheat oven to 375°F. Pound chicken breasts to even thickness. Season with salt and pepper. Coat with breadcrumbs and Parmesan.
  • Heat olive oil in skillet over medium heat. Cook chicken until golden on both sides. Transfer to baking sheet and bake for 15 minutes.
  • Boil pasta according to package instructions until al dente. Drain and set aside.
  • In skillet, sauté garlic. Add marinara sauce and simmer. Toss in cooked pasta to coat.
  • Slice baked chicken. Layer pasta, chicken, and mozzarella in baking dish. Sprinkle with Parmesan.
  • Bake assembled dish for 20 minutes until cheese is bubbly and golden.
