Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 Rolling Pin

Ingredients

Flatbread Base

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup water
  • 2 tbsp olive oil

Toppings

  • 1 cup cherry tomatoes halved
  • 8 oz fresh mozzarella sliced
  • 1/4 cup fresh basil leaves
  • Balsamic glaze for drizzling
  • Salt and pepper to taste

Instructions

Preparation

  • In a large mixing bowl, combine the flour, baking powder, and salt. Gradually add the water and olive oil, stirring until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  • Roll out the dough into a thin, even circle or rectangle, depending on your preference. Place it on a baking sheet lined with parchment paper.
  • Preheat your oven to 400°F (200°C) to ensure it is ready for baking the flatbread.
  • Arrange the sliced mozzarella evenly over the dough, leaving a small border around the edges. Scatter the halved cherry tomatoes on top, and season with salt and pepper.
  • Place the assembled flatbread in the preheated oven and bake for 15-20 minutes, or until the crust is golden brown and the cheese is bubbling.
  • Remove the flatbread from the oven and allow it to cool for a few minutes. Before serving, garnish with fresh basil leaves and drizzle with balsamic glaze.

Serving

  • Cut the flatbread into slices and serve immediately while still warm for the best flavor.

Storage

  • Store any leftover flatbread in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for a few minutes before serving.

Notes

Pro Tips: Use fresh mozzarella for a creamier texture and richer flavor. Allow the dough to rest for a few minutes before rolling out for better handling. Pre-bake the flatbread for 5 minutes for an extra crispy crust. Use a pizza stone for a perfectly crisp base.
Ingredient Substitutions: For gluten-free, use a gluten-free flour blend. Add artichoke hearts, roasted red peppers, or olives for extra flavor.
