  • Add the eggs one at a time, beating well after each addition. Gradually add the flour and baking powder, mixing until just combined.
  • Divide the batter evenly between the prepared pans. Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Filling and Assembly

  • In a medium bowl, mix together the ricotta, mascarpone, confectioners' sugar, vanilla extract, and lemon zest until smooth. Chill for at least 30 minutes.
  • Place one cake layer on a serving plate and spread a generous amount of filling over it. Top with the second layer and cover the top and sides with the remaining filling.
