Baked Cheesy Taco Sticks for Game Night Snacking

Ingredients
  

Vegetarian Taco Filling

  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 can black beans drained and rinsed
  • 1 tbsp taco seasoning mild

Taco Sticks

  • 1 lb refrigerated dough pizza or crescent dough
  • 1 cup mozzarella cheese shredded
  • 1 cup cheddar cheese shredded

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper so the taco sticks bake evenly and release easily.
  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook slowly until soft and translucent, stirring occasionally.
  • Add the minced garlic and cook briefly until fragrant, being careful not to let it brown.
  • Add the drained black beans to the skillet and stir to combine with the onion and garlic. Season with taco seasoning.
  • Use the back of a spoon to gently mash some of the beans while leaving others whole. This creates a creamy but textured filling.
  • Remove the skillet from the heat and allow the bean mixture to cool slightly so it does not soften the dough during assembly.
  • Roll out the dough on a clean surface and cut it into evenly sized rectangular strips so the taco sticks bake uniformly.
  • Place a spoonful of the bean mixture along the center of each strip and top with mozzarella and cheddar cheese.
  • Fold the dough over the filling and pinch the edges firmly to seal, forming long enclosed sticks.
  • Arrange the sticks seam side down on the prepared baking sheet, leaving space between each one.
  • Bake for 20 to 25 minutes, until the dough is golden and the cheese inside is fully melted.
  • Remove from the oven and let the taco sticks cool slightly before serving so the filling sets and is easier to eat.
