  • 8 oz pasta such as penne or fusilli
  • 6 slices turkey bacon chopped
  • 1 lb asparagus trimmed and cut into 1-inch pieces
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

Preparation

  • Chop the turkey bacon into small pieces and set aside. Trim the ends of the asparagus and cut them into 1-inch pieces. Mince the garlic.

Cooking

  • Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.
  • Heat olive oil in a large skillet over medium heat. Add the chopped turkey bacon and cook until crisp. Remove bacon from skillet and set aside.
  • In the same skillet, add minced garlic and asparagus. Sauté until asparagus is tender, about 5 minutes.
  • Return the cooked bacon to the skillet. Add the drained pasta and toss to combine. If the pasta seems dry, add reserved pasta water as needed to create a light sauce.

Finishing Touches

  • Stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
  • Divide the pasta among serving plates. Garnish with additional Parmesan cheese if desired.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
