Preparation

  • Wash the asparagus thoroughly. Trim the woody ends and cut the spears into 1-inch pieces.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

Cooking

  • In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the asparagus and cook for 5-7 minutes until tender-crisp.
  • Add the cooked pasta to the pan with asparagus. Pour in the reserved pasta water, lemon juice, and grated parmesan cheese. Toss to combine and season with salt and pepper to taste.
  • If desired, add halved cherry tomatoes, toasted pine nuts, and a pinch of red pepper flakes for extra flavor.

Serving

  • Transfer the asparagus pasta to serving plates. Garnish with additional parmesan cheese and a sprinkle of fresh herbs, if desired.
