  • 6 oz salami sliced
  • 8 oz mozzarella cheese cubed
  • 1 cup cherry tomatoes halved
  • 1/2 cup black olives sliced
  • 1/2 red onion thinly sliced
  • 1 bell pepper diced

Dressing

  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions
 

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  • While the pasta is cooling, slice the salami, cube the mozzarella, and chop the vegetables.
  • In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, and a pinch of salt and pepper.

Assembly

  • In a large mixing bowl, combine the cooled pasta, salami, mozzarella, cherry tomatoes, olives, red onion, and bell pepper.
  • Pour the dressing over the salad ingredients and toss gently to coat everything well.

Serving

  • Cover the bowl with plastic wrap and chill in the refrigerator for at least 1 hour before serving.
